Recipe Name: Roasted Chili Sumac Salmon with Mushroom Succotash

Denver’s very own Harold Sims, winner of Netflix’s Cooked With Cannabis, has taken this Thanksgiving entree to an entirely new level. Straying away from the traditional turkey dish as the main course, Harold’s focused this meal around anti-inflammatory foods that aren’t too heavy. INGREDIENTS & INSTRUCTIONS
For the Salmon
- 1 lb of fresh Salmon
- 1 tsp Smoked Paprika
- 1 Tbs Chopped Calabrian Chilies
- 2 Tbs Ground Sumac
- 2 tsp Brown Sugar
- 1 tsp Infused Olive Oil
- Salt & Pepper to taste
- Combine all spices and oil.
- Pack lightly on top of Salmon.
- Bake at 425 for 8-12 mins.

For the Succotash
- ½ Cup Frozen Multi-Color Corn
- ½ Cup Button Mushrooms Sliced
- ½ Med. Red Pepper
- ½ Med. Heirloom Tomato
- 2 Tbs Fresh Chives
- ½ Red Onion Diced
- ½ Lemon
- Salt & Pepper to taste
- Combine everything, except the lemon, in a pan and sauté over high heat until lightly browned.
- Pour into bowl toss with lemon and let chill.
For the Green Pea Risotto
- 1 Cup Frozen Peas
- 1 Cup cooked med. grain rice
- 2 Tbs Dill
- ½ Lemon
- 2 Garlic Cloves
- 1 Tbs Infused Butter
- Salt & Pepper to taste
- In pan over medium-low heat, add rice, ½ cup of peas and Butter.
- Add remaining peas and garlic to blender, blend until smooth.
- Add the pea/garlic mix to pan and warm until everything is evenly heated.

For the Coconut Ochazuke (Green Tea Broth)
- 1/2 Cup Coconut Milk
- 4 Small or 1 large Dried Seaweed Sheet
- 2 Tbs Chives
- 2 Bags Green Tea
- 1 tsp Flour
- Salt & Pepper to taste
- .5 Grams Purple Train Wreck
- Add everything to a small saucepan.
- Simmer, covered, over medium low heat for 30 minutes.
- Strain, and serve hot or cold.

CULTURAL INFLUENCE OF DISHES
Many dishes in the African culture use ingredients that are full of anti-inflammatory properties. The use of “Warm Spices”, such as Cumin, Cardamon, Sumac, etc., in African cuisine is largely responsible for this. Sumac is ranked high on the ORAC Chart, a chart used to measure the Antioxidant properties of varies foods. The following dishes are cooked with ingredients high on this scale.
CANNABINOID PROFILE
The use of cannabis high in Limonene, Myrcene, and Linalool are recommended. For this dish we infused 3 grams of Golden Lemons in 1 cup EVOO. This is the “Infused Oil” we will be using. For the butter we infused 1 gram of Garlic Road into 1 cup of butter.
